Task 4 - Chocolate Sculpture (Horse).


Lastly, our last task is chocolate sculpture. We plan to make a Horse with chocolate. 
Using playwood and iron wire and also "playar" ,we make a shape and stick with wire. 

After get the shape, we use aluminium foil and tape to wrapping a wire to shape the Horse. It function to make a shape look like a horse. And we wrapping with tape to stick the aluminium foil.

 After that, using a dark chocolate and put into the mixer. It use for sculpture the chocolate on horse. It is the suitable ways to sculpture the horse by mixer the chocolate. 









After finish our sculpture, we scrape the chocolate so it looks like Horse. And then, we use a hand to flatten the chocolate. Make a body leg, head, mouth also tail. Finish. This our Chocolate Sculpture (Horse)

Task 3 - Chocolate Box & Plastic Chocolate

Making a Chocolate Box.

1). We need to make a chocolate box. Our lecturer has divided the dark chocolate into groups.



2) To make a chocolate box, first of all we need to melt the dark chocolate with using the method double boiler. Place some baking paper on the sheet pan. Spread the chocolate that have been melted over the sheet pan that completely covered with baking paper and flatten it with spatula. Leave for a moment to let it cool and firm. 

 



4.) Next, when the chocolate has become firm, take a ruler and cutter knife and begin to score line in chocolate with the exact measure that our lecturer given. Do it while it’s still soft because when do it while it has become hard, it’s more likely to crack or break. Once the chocolate has been cut to the desired sizes, remelt the remaining chocolate that will be use as a gum to glue and stick the chocolate for making the chocolate box.



5)  After the chocolate has been melted, pour it into the piping paper. Press one of the side squares against the base, and hold it until it starts to set and it holds itself up. Proceed it along one of the sides and the bottom, so that the next squares will have two surfaces to stick to. Repeat to the other side. Clean the excess of chocolate with paintbrush.

Making a Plastic Chocolate.


The ingredients of plastic chocolate:- 

500g dark chocolate. 
175g liquid glucose.
100ml heavy syrup
1kg sugar and 300ml water.

 


Keep it at a cool room temperature, and careful handling it.

Task 2- Fish Butter Sculpture


Firstly, sketch roughly the design of fish on polystyrene block. As we all know, the steps to make a fish design same as make a swan. 


Then we cut another half on the other side which is it's body. After we get the shape that we want, we trimmed it slowly.


  Before cover the styrofoam with butter, we need to smooth the texture for the fish with using the sand paper and smooth it all around the styrofoam. Trim the Styrofoam until you get the image of the fish with the coral.


To get the smoothness surfaces, use the rough sandpaper before butter is applied. In room temperature using pastry margarine applied it on our fish sculpture. 


After that, all the surface must be applied with the butter, let it rest before you make the fish scales. Then, at the backside also must be applied with butter. It took about 5 hour to complete the fish scales. Keep it into cool temperature room.

Task 1 - Our Styrofoam Swan


1)    We were required to create a swan by using a Styrofoam. We need to cut the Styrofoam and divide the several blocks into groups. 


2)  We started to follow the swan sketch that is showed by Chef Azrul on Styrofoam. Next, we used a cutter knife to remove the excess bits using the sketch as a guide.

3)  To carve the swan, we need to do it very carefully and the step was very important at the head part of the swan. Another difficult part is wings because it required much detailed work and a sprinkle of visualization.
4) After that, we smooth the rough texture of Styrofoam by using sand paper. The rubbing motion makes the bird more life like. After our swan changed smooth, we color our swan for the last touch up.


Finally, this is our Styrofoam swan.

The Journey

 This is some of the moments of our journey through out our Pastry Artisty class. We enjoy our learning experiences and the knowledge that we get about how to do sculpting and carving. We will update more about our learning process in the upcoming post.
